Cajun Chicken Pasta

Y’all know me… when it comes to dinner, I like quick and easy!  I actually got this recipe from Brian’s momma many years ago and I have been making it ever since.  It’s one of the few recipes that the entire family loves, picky Jacob and Olivia included! 

If you’re a person who doesn’t like spicy foods, don’t let the word Cajun scare you away!  This dish can be served as spicy or as mild as you like it… all you have to do is use more or less of the Cajun seasoning.  Our kids do not like anything spicy so I stick to the non-spicy version even though I love a bit of heat!  


Buy It

4 boneless, skinless chicken breasts, washed
Garlic
Salt
Pepper
Cajun seasoning
Olive oil
16 oz. box Rotini noodles (I used the tri-color rotini, hence the multiple colors)
Water to boil noodles
1 jar alfredo sauce (I love Newman's Own Roasted Garlic Alfredo Sauce)
1 tomato, diced
1 bunch green onions, chopped
1/2 cup parmesan cheese

Make It

1.    Sprinkle chicken on both sides with garlic, salt, pepper, and Cajun seasoning and slice into bite sized pieces.

2.    Add 2 Tbsp. olive oil to a skillet and heat to medium-high heat.

3.    Once the skillet is hot, add all chicken pieces, and cook until chicken is no longer pink in the middle.  Be sure to stir often so the chicken doesn’t burn.  Once completely cooked, remove from the burner and set aside.

4.    In a large pot, bring water to a boil and cook noodles according to the box instructions.

5.    When noodles are done, drain and pour in a large baking dish.

6.    Pour alfredo sauce over the noodles and stir until noodles are completely covered.

7.    Stir bite-sized chicken pieces in with the noodle and sauce mixture.

8.    Sprinkle diced tomatoes over the top of the dish.

9.    Sprinkle green onions over the top of the dish.

10. Top with parmesan cheese.

11. Bake at 350 degrees for ten minutes or until cheese is bubbly and brown.



I like to serve this with a side, preferably a green.  On this evening we enjoyed ours with fresh steamed green beans and it was delish!

This one is always a real crowd pleaser!
